Pierogi Dough
This is a simple Pierogi Dough made from minimal ingredients. It has an
extremely low hydration of 43% so it is very firm when the kneading is
finished.
Ingredients:

1360 grams of Semolina Flour (two 24 ounce bags of Bob's Red Mill
Semolina Flour)
- 600 grams of Water
- 1 Teaspoon of Salt
- 1 Tablespoon of Olive Oil
Preparation:
Mix the ingredients and knead until the dough is a smooth and evenly
hydrated.
