Ethiopian Yellow Peas
Ingredients:
- 2 cups Yellow Split Peas
- 5 cups of water
- 1 Tablespoon of Onion Powder
- 1/2 Tablespoon of Garlic Powder
- 1/2 teaspoon Black Pepper freshly ground
- 1/2 teaspoon White Pepper freshly ground
- 1-1/2 teaspoons of Cumin Seed freshly ground
- 1 teaspoon of Turmeric
- 2 teaspoons of Salt
- Seeds from 1 green Cardamom seed pod
Finishing Ingredients:
- 2 tablespoons butter
- 2 0r 3 tablespoons Potato Starch
Preparation:
Rinse the Peas.
Add everything to a pressure cooker.
Bring the mix up to heat VERY SLOWLY, as the yellow peas can froth and block up the pressure valve.
Once the cooker has built its pressure and the valve is dancing, cook for 8 minutes.
Remove from heat and leave the cooker sealed. Let the contents cool while the pressure dissipates naturally.
Add the butter and Potato Starch. Resume heating the pan with the cover off. Stir the contents until the butter melts and the mixture thickens.
Serve when ready.
